What’s in my winter recipe collection?

I've recently moved into a new place in Bondi with a MUCH nicer kitchen than my previous apartments. If you’re a local, I’m sure you can sympathise with me on the state of 2 bedroom unit kitchens around here.... I actually think this is the first place in the last 3 years I've lived in without the cupboard doors falling off...Considering I’ve now got a nice little workspace for healthful creations, I don’t have many more excuses for not cooking.I’m really not a fan of doing things ‘by the book’, which of course has meant many burnt, singed, overcooked, undercook, dry, disorderly and dishelved dishes. But hey- that’s the fun part right?Today though I want to share two recipes I DID get right and one little treat recipe which I know you will love love love!If, like me, you are at the very beginning of your Master Chef journey- fear not! These are the simplest things to create AND people love them (unless my friends were just giving me false support? Were you?? If any of you are reading this now you should probably CALL ME. NOW. Before I embarrass myself. Again.)

Almond Flax Pizza Crust

Make approx. 12 inch pizza base.

Ingredients

1-1/4 cups flaxseed meal1 cup almond flour/meal1 tsp sea salt2 tsp natural baking powder1 Tbs honey1 tsp Italian mixed dried herbs3 large eggs, beaten until smooth3 Tbs coconut oil, melted½ cup watertoppings of choice

How To• Heat oven to 220° C.• Combine flaxseed meal, almond meal, sea salt, baking powder and Italian herbs together until lump-free.• Beat together eggs, oil, honey and water until smooth.• Pour liquid mixture into dry mixture. Blend well until smooth.• Press into desired shape.• Place on a pre-greased or non-stick pizza pan or sit on a silicon baking mat.• Bake for 15 minutes in the center of the oven until cooked.Add favorite toppings and then return to the oven to bake for an additional 10-15 minutes

Make sure you really flatten out our dough! It’s much nicer if you make it thinner because then it will go crispy. The toppings I used were: fresh pineapple, bazil and leg ham for one and prosciutto, olives and goats cheese for another.For a tomato base I added tomatoes, chilli and garlic into my food processor and then just spread it on! You can add as much chilli, garlic or other herbs as you like. 

Sheppard's Pie with Cauliflower Mash

Ingredients

SERVES approx. 51 tablespoon of coconut oil, for frying2 onions, chopped 3 cloves garlic, chopped 500g grass fed, grass finished organic beef/ lamb mince 2 large carrots, shredded A handful of beans, chopped into quarters 4-6 tomatoes, chopped 1 teaspoon sea salt 1 teaspoon pepper 1 teaspoon turmeric

Cauliflower mash 1 cauliflower, cut into florets 1 tablespoon extra virgin olive oil 1 tablespoon of flaxseed oil Sea salt (to taste) Pepper (to taste) 

How To

• Preheat oven to 220ºC. • Heat coconut oil in large frying pan. Add onion and garlic, sauté until onion is golden brown. • Add beef mince and cook for a further 5 minutes. • Add carrots, beans, tomatoes, salt, pepper and turmeric. Turn the heat down and cover for 20 minutes. • Steam cauliflower until soft then add to blender or food processor. Add the olive oil, flaxseed oil and sea salt and pepper to taste. Puree until smooth. • Transfer the mince mixture into 18cm baking dish (even out with a spoon). • Pour over mash and again even out with a spoon. Gently scraping a fork over the top. • Place in oven for 25-30 minutes, or until the top of the mash has a crispy golden layer.

I’ve made this one a few times. The last time I had run out of olive oil so I used macadamia nut oil and it was great! I also added goats cheese feta and black olives as a topping and it was AMAZING!I know this one seems strange but I dare you to make it, serve it to your partner and see if they can tell the difference from cauliflower to mash potato... And just a little treat to finish...

Paleo Anzac Cookies... So good!

Ingredients

1 cup (100 g) almond meal (ground almonds)1 cup (100 g) flaked almonds1 cup (75 g) organic desiccated coconut1/4 (80 g) cup honey1/4 cup (60 ml) macadamia nut oil1/2 teaspoon bicarb soda1 tablespoon water

How to

• Firstly- preheat your oven at 120.• Add almond meal, flaked almonds and coconut in your bowl.• 
On a low heat, add honey and oil to a small pot.• Add the bicarb to the water and pour into the honey. Mix this until it starts to froth.• 
Throw in your bowl of dry ingredients, mix it all together!• This should make approx. 20 cookies, so once the mixture is combined, scoop out your sweet little treasures of 20 to bake for about 30 minutes. If you’re interested in more treats check out:https://bottomsuphealth.com.au/what-your-trainer-likes-to-treat-on/
