Our super delicious Raw Pad Thai has been one of the most popular recipes from our book. use the recipe on this blog to make it yourself. It’s super easy, healthy and totally delicious!

What you'll need...

Beautiful

  • 1 carrot, spiralised

  • 1 zucchini, spiralised

  • 1 cup finely chopped purple cabbage

  • 1 red capsicum, thinly sliced

  • 100 g snow peas, topped and tailed and thinly sliced

  • ½ cup roughly chopped coriander

  • 1 lime, to serve

Unstoppable

  • ¼ cup roughly chopped roasted almonds (optional: swap for peanuts)

Fearless

(Satay Sauce)

  • ¼ cup almond butter (optional: swap for peanut butter)

  • 1 tablespoon lemon juice

  • 1 teaspoon grated fresh ginger

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon tahini

  • 2 tablespoons tamari

What you'll do...

  1. In a large bowl, combine the carrot, zucchini, cabbage, capsicum, snow peas and coriander.

  2. In a separate bowl, mix together all the Satay Sauce ingredients. The sauce will be quite thick.

  3. Pour the sauce onto the salad and, using your hands, toss until the salad is dressed well.

  4. Dish up the salad into two bowls and top with the almonds and a squeeze of lime juice.
