Winter Warming Carrot Cake Oats

You totally need this oats recipe in your life for winter! It’s so easy, so yummy and SO comforting – we’ve even been known to cook it up for lunch in the office on really chilly days ;)

Carrot Cake Oats

What You’ll Need (Serves 1)

Beautiful plant-based foods

  • 1 carrot, grated

Unstoppable energy foods

  • 1/3 cup oats

  • 1 serve vegan protein powder

  • 1 medjool date, chopped

  • 1 tablespoon walnuts, chopped

Fearless fats & flavours

  • 1 cup coconut milk

  • 2 teaspoons cinnamon

  • 1/4 teaspoon nutmeg

What You’ll Do:

  1. In a saucepan, add in the carrot, oats, coconut milk, protein powder, nutmeg and 1.5 teaspoons of the cinnamon. Cook for 2 – 3 minutes until the oats have absorbed the liquid.

  2. Top with the chopped date and walnuts, and sprinkle with the remaining cinnamon.

PRO TIP

Instead of cooking in a saucepan, you can simply place all ingredients in a container, mix well and keep in the fridge overnight for chilled overnight oats, and eat them straight up, or pop them in the microwave for a fast, toasty-warm breakfast.
