Carob, Banana & Macadamia Loaf
What You'll Need (Makes 10 Slices)
2 ripe bananas, mashed
1/2 cup carob powder
1/4 cup buckwheat flour
3/4 cup almond meal
1/2 cup macadamias, roughly chopped
2 eggs, lightly beaten
1/4 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon cinnamon
1 teaspoon baking powder
What You'll Do
Preheat the oven to 160°C and line a bread tin with baking paper.
In a large bowl, combine the carob, buckwheat flour, almond meal, macadamias, cinnamon and baking powder and mix together.
In another bowl, combined the banana, eggs, maple syrup and coconut oil and mix well.
Pour the wet ingredients into the dry and mix until just combined.
Pour the mixture into the prepared tin and cook in the oven for 35 minutes, until a skewer inserted comes out clean.
TIP. Serve with a lather of Pimped Up Nut Butter.
