Carob, Banana & Macadamia Loaf
What You'll Need (Makes 10 Slices)
- 2 ripe bananas, mashed 
- 1/2 cup carob powder 
- 1/4 cup buckwheat flour 
- 3/4 cup almond meal 
- 1/2 cup macadamias, roughly chopped 
- 2 eggs, lightly beaten 
- 1/4 cup maple syrup 
- 2 tablespoons coconut oil, melted 
- 1 teaspoon cinnamon 
- 1 teaspoon baking powder 
What You'll Do
- Preheat the oven to 160°C and line a bread tin with baking paper. 
- In a large bowl, combine the carob, buckwheat flour, almond meal, macadamias, cinnamon and baking powder and mix together. 
- In another bowl, combined the banana, eggs, maple syrup and coconut oil and mix well. 
- Pour the wet ingredients into the dry and mix until just combined. 
- Pour the mixture into the prepared tin and cook in the oven for 35 minutes, until a skewer inserted comes out clean. 
TIP. Serve with a lather of Pimped Up Nut Butter.
