Healthiest Choc Banana Pancakes Ever
Everyone loves pancakes, right? They’re the ultimate Sunday food and always make you feel like a big kid again.But what if your dedication to healthy eating has meant no pancakes for days… weeks… months… years!Well guess what? Those legendary banana pancakes from your childhood are about to make a serious comeback, with the addition of… chocolate! Well, cacao at least ;)You’ll only need 5 ingredients, plus a few toppings of course ;)
What you'll need
- 1 Banana (the larger sugar bananas work best, or 2 small lady fingers)
- 2 Eggs
- 1 teaspoon Cinnamon (optional; a pinch of nutmeg too)
- Raw cacao to taste (some love 1 teaspoon, we love a tablespoon!)
- Organic butter, or coconut oil (for frying)
+ Toppings of choice: e.g. frozen berries and Greek or coconut yoghurt
Now do this
- Pop bananas, eggs, cinnamon/nutmeg and cacao in your blender and blend them up!
- Pour your batter into a slightly oiled or buttered pan over a medium heat and cook as you would regular pancakes.
- Recipe makes one large, or two small cakes.
- Serve with topping/s of choice.
Vegan option
Use Vegg, a vegan egg yolk, or substitute the eggs for a scoop of protein powder (we love Passion Projects) and a handful of oats – it’s a little messier, more like a pancake-scramble, but it works! This is a variation of a recipe from our foundation BUF Body program. It's seriously soooooo good… enjoy it!
